LYOFOOD process

LYOFOOD cooks the finished meal before freeze-drying. This helps keep the taste and the properties of the individual ingredients. The meal can be prepared in about 10 minutes. The food offered by LYOFOOD is free from preservatives, artificial substances, flavourings and colourings.

What freeze-drying is

Freeze-drying dries food by freezing it and then removing frozen water by sublimation, so the ice passes directly into water vapour without becoming liquid. This helps products keep their natural taste, aroma, shape and nutritional value while becoming light and durable.

  • Freezing: the food is frozen at very low temperatures, often below -40 degrees C.
  • Sublimation in vacuum: the product is placed in a vacuum chamber under very low pressure and gently heated, so the ice sublimates and is removed from the chamber as gas.
  • Final drying: remaining bound water is removed so the moisture level falls to about 1-2%.

Benefits of freeze-dried food

  • Long shelf life: it can be stored for many years without preservatives.
  • Low weight: with water removed, the food can weigh up to 90% less, which makes transport easier on trips.
  • Preserved value: products keep vitamins, minerals and their original taste.
